Spaghetti with Olive Oil and Garlic

The simplicity of this dish is what makes it so delicious. The lemon zest gives it a light and bright flavor and a small pinch of red pepper flakes adds the perfect amount of heat. You can get creative with this recipe, but the real success of this pasta is its few ingredients that work so well together. Be sure to use a good olive oil and fresh ingredients.
 

Ingredients:

Kosher salt for cooking pot, plus 1 tsp
1-1/2 lb spaghetti
5 cloves garlic, finely minced
2/3 c extra virgin olive oil
small pinch of red pepper flakes
3 T flat leaf parsley
1/2 lemon, finely zested
freshly grated Parmigiano-Regianno cheese
 

Directions:

  1. Fill a large pot with cold water and bring to a boil over high heat; generously salt the water. Add the spaghetti and cook until al dente, stirring occasionally, about 8 to 10 minutes.
  2. While the pasta is cooking, combine the olive oil, minced garlic, 1 tsp salt and red pepper flakes in a large skillet. Warm oil with garlic and spices over low heat, stirring occasionally. Cook until garlic is tender and golden brown; about 8 minutes. Watch carefully to be sure garlic does not begin to burn.
  3. When pasta is al dente, remove from heat. Scoop out about 1/4 to 1/3 cup of the pasta cooking water and add to the garlic and olive oil mixture.
  4. Drain pasta and add to the pan with garlic and oil. Mix well, using tongs to thoroughly coat pasta. Add the flat-leaf parsley and lemon zest. Toss to coat spaghetti.
  5. Taste and adjust seasonings if necessary. Transfer to a warmed serving platter or bowl and top with grated Parmigiano Regianno cheese.
